what to do with saved scraps if you don’t have space
Ajax Kofsky is a lover of the environment and agriculture alike, and is passionate about moving towards sustainable solutions and food system justice and accessibility. They will be graduating this spring from Westchester Community College with an associate’s degree in Environmental Science, as well as returning to work on the farm at Glynwood in Cold Spring for the summer. They hope to continue their agroecological studies at a four-year institution in the future, and are currently partnering with the Sustainable Materials Management Stewardship program through Syracuse University to bring this composting workshop to the local community.
